Sandwich with salmon and cheesy egg

If you have never tried making scrambled eggs with Le Gruyère AOP, now is the time. You are in for a delicious treat! Below is a recipe for delicious scrambled eggs in a sandwich with smoked salmon. Perfect for breakfast on a lazy Sunday.

Lightly pickled cucumbers
1.5 dl sugar
2 dl vinegar
1 tbsp peppercorn
1 cucumber
1-2 shallots
1 handful of dill
Eggs
6 eggs
1 tbsp whipping cream
1 tbsp butter
75 g Le Gruyère AOP
Salt and pepper
Sandwich
8 slices of bread
8 slices of smoked salmon
Pepper and dill
  1. Lightly pickled cucumbers:
    Boil the sugar and vinegar together with the peppercorns until the sugar has melted.
  2. Cut the cucumber into sticks and the onions into slices. Put them in a jam jar. Pour the hot brine over the vegetables and add dill. Let the cucumbers marinate until ready to use, or refrigerate for a few days.
  3. Eggs:
    Beat the eggs with a little cream. Melt butter in a pan and make soft-scrambled eggs. Grate the Le Gruyère AOP roughly and add it into the soft eggs. Season with salt and pepper.
  4. Sandwiches:
    Fill the sandwiches with egg, salmon and dill. Season with pepper. Wrap the sandwiches in food paper or serve them right away with pickled cucumbers.
