- Pit the dates. Cut the Le Gruyère AOP into 2-3cm sized pieces and fill the dates with them. Wrap each date tightly in a strip of bacon first once lengthwise and then the other way to cover the date completely. Place the dates on a baking tray lined with a sheet of baking paper, turning them so that the end tip of the bacon is secured underneath the date.
- Heat oven to 200 degrees and bake the devils until crispy, about 8 minutes. Let cool to room temperature before skewering with a tooth pick. Arrange them on a tray and sprikle with paprika and serve.
 Prep ahead: wrap the dates and keep in the cold for up to a day in advance.
