Klockan sju p\u00e5 morgonen styr mj\u00f6lkproducenterna in p\u00e5 g\u00e5rden till Fromagerie de M\u00e9zi\u00e8res f\u00f6r att h\u00e4mta den nymj\u00f6lkade, fortfarande varma morgonmj\u00f6lken, till byns ysteri. <\/p>\n<blockquote>\n<p><strong>&#8220;Vi arbetar dagligen med 42 mj\u00f6lkproducenter och ysteriet \u00e4r en viktig m\u00f6tesplats f\u00f6r byn.  Vi anser att det \u00e4r viktigt att f\u00f6ra kunskapen om osttillverkning vidare ocks\u00e5 till n\u00e4sta generation. Ostmejeriet har tre l\u00e4rlingar varje \u00e5r&#8221;<\/strong>, f\u00f6rklarar ostm\u00e4stare Nicolas Schmoutz.<\/p>\n<\/blockquote>\n<p>Totalt levereras 5,3 miljoner kilo mj\u00f6lk till M\u00e9zi\u00e8res ostmejeri varje \u00e5r. Ysteriet h\u00f6r till de st\u00f6rsta i Fribourg-regionen.<\/p>\n<p>Ostm\u00e4stare Schmoutz h\u00e4lsar glatt p\u00e5 producenterna medan han tar laboratorieprover av mj\u00f6lkpartierna. Varje parti mj\u00f6lk kontrolleras f\u00f6re anv\u00e4ndning.<\/p>\n<p>Efter att ha kontrollerat mj\u00f6lkpartierna som har anl\u00e4nt till M\u00e9zi\u00e8res p\u00e5 morgonen, h\u00e4lls den f\u00e4rska mj\u00f6lken i en 6000-liters bass\u00e4ng som inneh\u00e5ller mj\u00f6lk som levererats f\u00f6reg\u00e5ende kv\u00e4ll. Mj\u00f6lken som levererats p\u00e5 kv\u00e4llen har st\u00e5tt i bass\u00e4ngen hela natten. <\/p>\n<p>Ostm\u00e4staren tillf\u00f6r mj\u00f6lken en bakteriekultur tillverkad av vassle genom mj\u00f6lksyrej\u00e4sning. Bakterierna erh\u00e5lls fr\u00e5n vasslan fr\u00e5n f\u00f6reg\u00e5ende kv\u00e4ll. D\u00e4refter tills\u00e4tts l\u00f6pe i bass\u00e4ngen, ett naturligt tillsats\u00e4mne som utvinns ur kalvens mage, vilket g\u00f6r att mj\u00f6lken koagulerar och proteinet separeras fr\u00e5n vasslen. En liter obehandlad komj\u00f6lk inneh\u00e5ller cirka 33 gram protein. F\u00f6r att beh\u00e5lla sina fina aromer v\u00e4rms den obehandlade mj\u00f6lken inte upp innan koaguleringen.<\/p>\n<p>Ostmassan bryts med stora roterande knivar tills den bildar granuler som p\u00e5minner om grynig f\u00e4rskost. D\u00e4refter h\u00f6js temperaturen gradvis till 57 grader. Det tar mindre \u00e4n en timme.<\/p>\n<p>Till f\u00f6ljande h\u00e4lls den uppv\u00e4rmda ostmassan i runda formar.  I kanten p\u00e5 varje form finns graveringen &#8220;Le Gruy\u00e8re AOP&#8221; samt ysteriets licensnummer. Dessutom m\u00e4rks den vita ostmassan med kasein allts\u00e5 mj\u00f6lkprotein. M\u00e4rkningen anger numret p\u00e5 osthjulet dvs. rundeln och osttillverkaren samt tillverkningsdatum. <\/p>\n<p>\u00d6verskottet av v\u00e4tska pressas ur hjulen i ca 20 timmar med en kraft p\u00e5 upp till 900 kg.<\/p>\n<p>Efter pressning placeras osthjulen f\u00f6r ett dygn i ett saltvattenbad med en salthalt p\u00e5 cirka 22 %. I badet h\u00e4nder tre saker som \u00e4r avg\u00f6rande f\u00f6r smaken, lagringstiden och mogningsprocessen; \u00e4nnu mer v\u00e4tska avl\u00e4gsnas ur ostarna, de absorberar salt och b\u00f6rjar bilda en skorpa. <\/p>\n<p>Efter badet b\u00f6rjar ostens mognadsprocess. Rundlarna f\u00f6rflyttas till en k\u00e4llare d\u00e4r de vilar p\u00e5 tr\u00e4hyllor i tre m\u00e5naders tid. De v\u00e4nds och tv\u00e4ttas regelbundet med saltl\u00f6sning. <\/p>\n<blockquote>\n<p><strong>&#8220;I v\u00e5r k\u00e4llare mognar som b\u00e4st 66 000 osthjul. Varje hjul v\u00e4ger 36 kilo, och till ett hjul g\u00e5r det \u00e5t cirka 400 liter obehandlad mj\u00f6lk.
